One of the common complaints that I hear when it comes to eating healthy is that it takes too long to prepare each meal. That couldn't be further from the truth. The majority of the meals that I eat take less than 10 minutes to prepare and I cook enough to last through several meals.
Don't let lack of time to prepare a healthy meal be one of your excuses. There is no reason why you should not be living in your dream body at this very moment. You do deserve it after all RIGHT!
Here is one of my favorite meals. It's kind of a scrambled egg white and veggie concoction.

Serving Size: approximately 3 late day meals
Ingredients:
16 egg whites
1 very large red pepper
300 grams frozen spinach
3 mushrooms
1 cup cheddar cheese
2 tblsp extra virgin olive oil
prep time: 2 minutes
cooking time: less than 10 minutes

If people find the egg whites a little bland, they can add just one whole egg and might enjoy the taste a lot more.
Your email was timely, I've been relying on pre-made meals a little too much lately, need to get back to making stuff for myself.
Why do you choose egg whites vs. eggs?
Scott- is there a reason why you chose not to sautée the peppers, mushrooms and spinach together in a separate pan before folding it into the egg? Would that kill some of the nutritional value of the ingredients?
